Optimization of plant-based fermentation to improve the sensory characteristics of fermented products.

Missions


Within the Biological Engineering team of the Applied Research department, the future intern will work with a research manager in microbiology. His/Her missions will be:

  • Literature review concerning the fermentation of plant-based ingredients
  • Determine the impact of microbial enzymes to improve plant-based ingredient sensory quality through microbiological (kinetics of acidification), physical-chemical (nutritional composition), biochemical (electrophoresis) approaches
  • Characterization of prototypes from plant-based raw materials and/or fermentation (microbiology, physical-chemical, sensory)
  • Data analysis and results presentation during the team’s meeting and the internship meeting day

Education and Required Skills:

  • Engineer or M2 student with a biochemistry and microbiology background
  • A first experience at a research laboratory
  • Good interface between the theory and the practical activities
  • Good interpersonal skills, autonomy, initiative, adaptability, and flexibility are required for this position.
  • Ability to read in English
  • French and/or English speakers are welcome
